Rayos del Sol: A single farm Peruvian coffee

Coffee production at Finca Rayos del Sol consists of 40% Red Caturra, 35% Yellow Caturra, and 25% Bourbon. Surrounding fruit trees provide shade coverage and only organic fertilizers are used. Tropical fruit trees are inter-cropped with the coffee to support biodiversity and provide shade coverage for the coffee trees.


This coffee is processed similarly to our other Peruvian direct trade coffees in which fully ripened cherries are hand-picked, wet-processed and allowed to gradually sun-dry on concrete patios for 7-12 days. The resulting parchment is then driven to a dry-mill in Puira Peru, where it is hulled and the green beans undergo a meticulous sorting procedure. Once ready for export, the green coffee is packaged in Grain-Pro lined jute bags for shipment from the port of Paita. Our team travels with the coffee, monitoring its movement at each stage of the process in order to ensure its successful passage from the farm to our facility.


Cupping Notes: Plum, Passion Fruit, Black Currant, Tangerine; Juicy, and jam like with a dense sweet body


Roasting Notes:  Large, dense beans with highly aromatic, fruited qualities most prominent midway through the roast. This coffee benefits from a more gradual ascent through the drying phase. Strong approach to first crack with decelerating rate of rise helps full development of perfumy qualities. While this is definitely a coffee that holds up well under heavier roasts, sweetest, cleanest flavors are present with moderate acidity at a city roast that is allowed to fully clear first crack by several seconds.
