Dear Friends at Kiva Han,
I
have seen many pictures of the Taj Mahal. However, no
photograph can do justice to the beauty of this tomb of
white marble and inlaid gems. Another example of beautiful
India is the Great Stupa in Stanchi. It appears grand in
spite of the powerful weather we're having here.
I am here during monsoon season.
The power of nature is demonstrated with constant, fierce
wind and rain. The people have found a way to harness this
power of nature for their own use by "Monsooning" Indian
Malabar coffee.
"Monsooning" is a washing
process in which coffee warehouse doors are opened and beans
are exposed to 12 to 16 weeks of monsoon winds. The beans
are frequently raked to insure uniform exposure. As a result
of this process; the beans have swelled to twice their
original size, their color changed to pale gold and their
taste is less acidic. Please present this well balanced,
mellow coffee to my friends at Kiva Han.
